Cultivated and processed at Tenuta Colombara in the Vercelli area, its exclusive treatment method to which it is subjected makes it particularly suitable for the preparation of high-level risotto.

During its processing, over a year 20 steps are carried out in which the bean is matured at controlled temperature (below 15 ° C) and subsequently reintegrated in the gem to maintain its rich nutritional properties, ensuring the taste of white rice but with the characteristics of brown rice.
