This Summum is the sublime result of a rum aged in the tropical climate and finished in the French barrels of Cognac Mercier.
Rum Summum, whose name comes from the Latin and denotes its main characteristic, means: superlative.
Produced by the Caribbean distillery Alcoholes Finos Dominicanos, in the Dominican Republic, it is obtained from the juice of the sugar cane grown directly and entirely on the island, which allows the distillation of the juice to take place within 48 hours from the story. This is the peculiarity that differentiates it from other Dominican rums which instead are distilled from molasses (coming from neighboring countries: Brazil, Panama etc.), which, unlike the juice, is maintained over time.
The aging of the Summum takes place on the island, in its tropical climate, inside oak barrels, with the "Solera" procedure for 12 years, to then be transferred and subjected to a short passage in barrels previously used for Cognac in the Mercier distillery.
This Ron Summum Cognac Finish shows up with its dark amber color with golden reflections. Soft and balanced, it reveals aromas of brown sugar with vanilla notes, coconut, grapes and dried plums. In the mouth it is fine, with a light and elegant sweetness, thanks also to the well integrated hints of the Dominican and French oak barrels.
