The Cabochon Millesimato is the most important cuvée of the Monterossa company. Produced with 70% Chardonnay and 30% Pinot Noir, it is vinified in oak barrels and then refined in the bottle for over 54 months. The olfactory complexity is typical of great wines, with varied and intense aromas, fruity, mineral and spicy tones with an incense finish. On the palate it is full and of great thickness; the acid vein stands out, with a savory finish with hints of exotic fruit and sweet spices. It has evolved beautifully over the years.
