I Sodi di San Niccolò is the flag of the Castellare company, a traditional blend of Sangiovese and black Malvasia, with a long aging first in oak barrels and then in the bottle. It opens on notes of cherry and plum to then turn on balsamic and spicy hints; on the palate it is intense and structured, with a velvety tannin accompanied by great freshness and flavor.
I Sodi di S. Niccolò is the most important wine of Castellare, several times in the Top 100 of Wine Spectator, repeatedly three glasses and five bunches, pride of the company for having been able to demonstrate the greatness of Sangioveto accompanied by black Malvasia, up to the fifth absolute place in the world.
The S. Niccolò vineyard is located on calcareous soils located at 350 / 400m s.l.m. in the municipality of Castellina in Chianti.
The harvest begins at full ripeness in mid-October, the grapes are then vinified in steel and after malolactic fermentation, the wine is aged in barriques, 50% of which are new for about 25-30 months and 12 months in bottle to complete the maturation.
I Sodi di S. Niccolò Castellare is a Supertuscan of great structure and longevity.
A wine with an intense ruby red color and a great olfactory concentration, which gives sweet aromas, red fruit jam, but also spices, vanilla and licorice. In the mouth I Sodi di S. Niccolò is characterized by a dense and elegant texture, also supported by the important acidity of the Sangiovese, the tannins are absolutely sweet and the finish is long and persistent.
I Sodi di S. Niccolò Castellare is an excellent red wine in combination with salami and savory meats, rich dishes and savory and aged cheeses. Very appreciated next to Tuscan Pecorino and Parmesan.
