There are only two distilleries in the Dominican Republic and this rum is produced by Alcoholes Finos Dominicanos, also known as Yazoo, the more historic of the two.
The Ron Summum Reserva Especial 12 years is produced in the traditional way, using only pure sugar cane juice grown within the Caribbean island, this allows the distillation of the juice to take place within 48 hours of telling (maximum time for this procedure can be performed). This is the peculiarity that differentiates it from other Dominican rums which, on the other hand, are distilled from sugar cane molasses from other countries.
The reason for this choice is the storage time of the molasses which, unlike the juice, is kept for a long time.
Aging takes place completely in a tropical climate, using the solera method.
Ron Summum Reserva Especial Alcoholes Finos Dominicanos is a rum that decisively turns towards softer notes of sweet spice and caramel but which still maintains a good structure and great persistence on the palate.
