"Les Pensees" is Dhondt Grellet's flagship wine, a vintage blanc des blancs whose grapes come from premier cru vineyards in the heart of the Cote des Blancs.

11 years of aging on the lees and a very low dosage, 1 g/l, make this champagne a masterpiece.

The nose is complex, with fresh and floral notes and hints given by the evolution of dried fruit and roasting, for a truly unusual combination. On the palate it is still very fresh, with a fabulous salty and almost brackish aftertaste.
