Bollinger R.D. 2007 is made up of 70% Pinot Noir and 30% Chardonnay from 91% Grand Cru and 9% Premier Cru, for a total of 14 Cru. The fermentation takes place entirely in oak barrels and the aging on the lees lasts 14 long years. Bollinger R.D. it is ready to be marketed a few months after disgorgement, with an extra brut dosage of 3 grams per litre. The decision to market this bottle of R.D. The bouquet is broad and complex, with notes of honey and brioche that blend with spicy hints of plum, apricot and dried fruit. In the mouth it is majestic, fresh, clean and lively, a fine bubble makes it almost creamy and fills the mouth with its endless persistence.
