The grapes that compose it are: 85% Cabernet Sauvignon and 15% Cabernet Franc. The soils on which the vineyards grow are mainly composed of limestone areas rich in marl, clay, stones and pebbles (from which the wine takes its name), and are located at an altitude between 100 and 300 m.s.l.m., with exposure to west / southwest.

The harvest is carried out entirely by hand from the second week of September, when fully ripe, and ends in the second week of October. After a meticulous selection of the grapes, they are subjected to careful soft pressing to avoid an excessive release of tannins. Alcoholic fermentation occurs spontaneously and without the addition of external yeasts. Then follows the malolactic fermentation in steel and refinement starting from December 2019, in 40% new French oak barrels, 40% first passage and 20% second passage.
After 25 months of aging in wood, the Sassicaia 2019 is moved to steel tanks and further selected before the final assembly and complete the refinement in the bottle.
This vintage is characterized by its marked aromaticity, a present but not intrusive structure and a soft tannin.
