The grapes are selected bunch by bunch with a limited yield of about 0.8 kg per plant and harvested slightly overripe; the vinification takes place in cement tanks for about 30-35 days, followed by a very long refinement, first in oak barrels for about 22 months and then in the bottle for 18 months without filtration.
