Pepi Sauvignon Südtirol - Alto Adige DOC is a white wine from 100% Sauvignon grapes.
The vineyards extend between 450 and 550 m asl, on calcareous soils of clayey and gravelly conformation subjected to strong thermal excursions. After the harvest, the grapes are subjected to immediate soft pressing. The vinification foresees a long contact with the yeasts which lasts for 8 months in large oak barrels, without malolactic fermentation.
Sauvignon Pepi Tramin is a white wine with a characteristic straw yellow color with greenish reflections, its scent is distinctly floral with initial sensations of elderberry and nettle that evolve into light exotic hints of mango and papaya as well as peach and gooseberry. It surprises for its freshness and flavor.
The combination of Sauvignon Pepi Tramin is excellent with first courses, with dishes based on fish or lightly spiced white meats, and it is excellent with asparagus.
