Castel Sallegg's Pinot Noir is produced with grapes from one of the best vineyards in the area surrounding Lake Caldaro, which enjoys a cool and breezy microclimate that guarantees perfect ripening of the grapes even in the most difficult years.

Before fermentation, the grapes are cold macerated for 5 days, to favor the extraction of the polyphenolic substances, then the wine is made in steel tanks and then aged in barriques for 12 months.

Pinot Noir Castel Sallegg is a fresh and light wine, with a compulsive and satisfying drink; we recommend it at a temperature of 14-15 degrees, with a Piedmontese fassona tartare and an avocado mayonnaise.
