San Michele AppianoThe attribute of "Passito" means those wines obtained from grapes left to dry in the air or in the sun, almost to the point of withering. In South Tyrol this almost always takes place in the vineyard, i.e. the bunches remain on the vine until the end of the year.
The elegant Passito Comtess Sanct Valentin St Michael Eppan is made from 100% Gewurztraminer grapes. The dried grapes are pressed and then fermented and aged partly in steel and partly in small wooden barrels.
The Passito Comtess enthuses for its intense fruit, soft and creamy body, wide entry and the palate enlivened by a note of freshness donated by a pedigree acidity. The fresh youthful aromas, in the face of correct conservation in the bottle, gradually become more complex, tending in particular towards delicate honeyed notes.
It marries beautifully with blue cheeses, but also with fruit-based desserts such as apple strudel, apple fritters with vanilla ice cream, peach melba.
