The grapes for this Moscato d'Asti are 100% Moscato Bianco (or Moscato di Canelli) and are grown in the municipality of Santo Stefano Belbo, Canelli and Calosso, extending for 41 hectares at an altitude ranging from 300 to 400 meters above sea level . The soil on which they are built is marl, rich in clay, sand and silt.
Once the harvest is completed, the must is left to ferment in an autoclave at a controlled temperature of 16-18°, in this phase, the typical perlage of Moscato is formed thanks to an overpressure of CO2 naturally produced by the fermentation process. The Moscato is then filtered and stored in autoclaves at a controlled temperature between 0 and 2°.
