Muffato della Sala 2020 50 cl Antinori
AntinoriThe Muffato della Sala Antinori is a passito wine made from botrytised Sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling grapes.
The harvest takes place at the end of October, a favorable period for the development of Botrytis Cinerea or "noble rot" on the bunches.
This mold reduces the water content of the grapes and concentrates its sugars and aromas, giving Muffato della Sala a harmonious and unmistakable taste.
The grapes come from the vineyards of Castello della Sala, located between 200 and 450 meters above sea level. on clayey soils, rich in marine fossils. The grapes were harvested manually by returning to the same vineyard several times depending on the state of the grapes. After being transferred to the cellar, the grapes are pressed and the must ferments for 18 days at a temperature of around 17°C.
The Muffato della Sala is transferred to French oak barriques (Alliers and Tronçais) where it ages for approximately 6 months. It will complete the maturation in steel where it remains for another 2 years.
Muffato della Sala Antinori is a fascinating sweet wine, an expression of a unique terroir, with a golden yellow color, revealing great aromatic and gustatory intensity. The nose is striking with hints of dried fruit, candied fruit and notes of saffron. On the palate it is sweet, balanced by a pleasant and decisive freshness. The marked aromatic persistence suggests excellent aging potential.
