A splendid dense red, elegant and imposing, enriched by aromas of licorice, coffee, chocolate and cherry, perfect to accompany meat dishes, game, roasts or aged cheeses.
Valpolicella Superiore Dal Forno is a prestigious red wine, the result of the same and rigorous criteria adopted to produce Amarone.
The grapes used are: 70% Corvina and Corvina grossa, 20% Rondinella, 5% Croatina and 5% Oseleta.
After a drying period of about a month and a half, a meticulous selection of the bunches is carried out to remove all the damaged grains. At the end of November the grapes are pressed and left to ferment for about 15 days in steel tanks at a controlled temperature of about 28 degrees, equipped with a computerized system that allows for automatic punching down.
Once racking is complete, Valpolicella Dal Forno stays for a few days in stainless steel tanks, and then matures in new barriques for 24 months. Then follows the assembly of the various barriques and filtration before bottling and further refinement of 36 months.
Valpolicella Superiore Dal Forno Romano is a deep ruby red wine, with intense and fruity aromas with hints of cherries and ripe plums. On the palate it has notes of vanilla, blueberry, blackberry, cherry jams, accompanied by chocolate and sweet spices.
This is a wine suitable to accompany and enhance fatty dishes based on red meat, grilled and braised meat and which goes well with aged cheeses with character.
