Amarone della Valpolicella Monte Lodoletta Dal Forno Romano is certainly one of the most famous red wines of Veneto.
Made up of 60% Corvina, 20% Rondinella, 10% Croatina, 10% Oseleta, the soils on which the Dal Forno vineyards grow are of alluvial origin, composed of 70% gravel, 15% silt and 15% clay .
The harvest begins from mid-September and ends at the end of October, followed by a selection of the best bunches on which a meticulous manual selection is carried out in order to remove all the less valuable grapes.
Only the best bunches of vines older than 10 years are prepared for drying for the production of Amarone.
The grapes are placed in plastic trays and left to rest for three months in large open rooms, where an innovative ventilation system maintains a high and capillary air flow. After drying, a further sorting of the grapes is carried out to clean each bunch of damaged grapes and towards mid-December the pressing of the Amarone Dal Forno Romano grapes begins.
Fermentation takes place in steel tanks at a controlled temperature, equipped with a sophisticated technological system that allows automatic punching down and a two-day maceration. Aging in new barriques begins in mid-January and lasts for 18 months, before being blended and bottled. The refinement ends after a further 36 months in the bottle before being placed on the market.
