Manna Franz Haas is a very long-lived South Tyrolean white wine, which was created to be paired with different dishes, without being forced to choose different wines.
Manna is a very unique white wine that Franz Haas dedicated with the first release in 1995 to his wife, Maria Luisa Manna. It is a cuvée of Riesling, Chardonnay, a part of Traminer Aromatico, a small percentage of Sauvignon Bianco and a 15% of Kerner.
The vineyards of the five vines are located in the municipalities of Montagna, Egna, Aldino and Bressanone at an altitude between 350 and 800 meters. The soils, very different from each other, are of dolomitic, porphyritic, sandy and marly origin and are exposed to the South-West.
The grapes, due to the different ripening periods, are harvested and processed separately. Chardonnay and Sauvignon Bianco are fermented in barrique, while Riesling, Gewürztraminer and Kerner ferment in steel tanks. At the end of the fermentation the young wines are blended and after a period of permanence on the fine yeasts of about ten months, the wine is bottled and further refined in the bottle for a few months.
In its youth the wine has yellow-golden notes, while after a few years of maturation intense golden tones appear. Manna seduces with a complex and layered bouquet that brings back notes of elderberry, pistachios and rose petals. It is striking for its complexity and concentration combined with a soft elegance and a mineral structure. Thanks to the presence of Riesling and Kerner it is a wine that lends itself to an excellent evolution.
Manna is exalted in combination with noble and precious dishes. The way in which the wine adapts to different dishes is fascinating, especially with dishes based on shellfish, fish in general and white meats, constantly renewing itself thanks to its multiple depth and structure.
