Levi RomanoGrappa di Moscato Romano Levi is aged in wood for six months and was produced with fresh pomace still dripping with must.
The pomace, all of Moscato DOCG, are used according to the recipe of Romano Levi. They are fermented and then immediately distilled, in an ancient alembic, the only one still on direct fire. The distillation takes place with a discontinuous method and with submerged marc. Immediately after distillation, the grappa is put into 220 liter barrels of various woods and stored for six months at a temperature between 14 ° and 19 °.
Light straw-yellow in color, it has typical and aromatic notes to the nose that recall the pomace used. Floral and fruity scents are perceived, from hawthorn to those of exotic fruit. On the palate it is dry, it reveals a remarkable balance and a great harmony on the palate in the fine and persistent aftertaste.
