Pinot Nero "Aton" 2018 75 cl Elena Walch
Elena Walch"Aton" represents the maximum expression of Pinot Noir from the Elena Walch company and very few bottles are produced, around 2,700 bottles.
A red wine that is one of Elena Walch's special reserves and takes its name from the Egyptian sun god Aton, the most important, represents light and life.
"Aton" Pinot Noir Riserva 2018 Alto Adige DOC Elena Walch comes from a precise selection of grapes from medium-high altitude soils, located between 400 and 600 meters above sea level on both sides of the valley, from clayey soils and calcareous and with marly residues. The vines are between 15 and 61 years old and come from low-yielding French clones.
The choice of the best quality parcels in the vineyards and an optimal combination of exposure and altitude allow for a higher phenolic maturation of the grapes without excessive sugar content and, consequently, a higher natural acidity which made "Aton" Elena Walch extraordinary for structure, elegance, freshness.
A 100% Pinot Noir produced with maniacal care, to seek the highest possible quality level.
The fermentation is preceded by a 5-day cold maceration which will facilitate the extraction of the aromatic substances from the grape skins; after vinification, it ages for 12 months in French oak barriques, 11 in steel and finally 15 in the bottle.
Aton Elena Walch has great evolutionary potential, a red wine that will excite lovers of Pinot Noir and, in general, of wine.
