Cà del Merlo Quintarelli is a red wine made up mostly of Corvina, Corvinone and Rondinella with a small balance of Cabernet Franc, Cabernet Sauvignon, Nebbiolo and Croatina.
Cà del Merlo Quintarelli is produced with the ripasso technique, whereby the first fermentation is followed by a second one in contact with the Amarone marc, always with indigenous yeasts. Subsequently the refinement lasts for 7 years in large Slavonian oak barrels.
A unique wine, Cà del Merlo Quintarelli has aromas ranging from cherry to cinnamon, first fruity and then spicy, always with a balsamic background. On the palate it enters delicately and then expands, manifesting itself in all its aromaticity; closes with a very long persistence of notes of cocoa and coffee.
