Baffonero is a 100% Merlot produced in the heart of Chianti Classico, on the Rocca di Frassinello estate.
The Baffonero red wine takes its name from the vineyard of the same name, 100% Merlot, a wine that winks at the Merlots of Pomerol, with a search for density and concentration without losing drinkability and freshness.
The vinification takes place in concrete tanks and then follows a refinement of a few months in barriques.
Baffonero Rocca di Frassinello, the nose is warm and persuasive, fruity with a variety of black fruits, in particular blackberry, blueberry and vanilla. In the glass the aromatic component changes, evolving towards tobacco, chocolate and slightly towards coffee. The complexity is perceived in the mouth. Full and structured with a freshness that makes it long and pleasant, silky tannins and excellent acidity.
The pairing is with equally structured foods such as stewed red meats and game as well as spicy cheeses.
