In the Collio, on the Slovenian side, there is the cellar of Edi Simcic, a historic winemaker in the area.

This wine is a pure Sauvignon Blanc, vinified in oak tonneaux and aged for a few months in old barriques.

The Edi Simcic's Sauvignon Blanc has the typical aroma of the vine, delicate and contained, enriched by salty and spicy notes that give complexity to the bouquet; the sip is full, with great structure but always retains a flavor and freshness that can only be found in this area.
