AyalaAyala's Blanc des Blancs champagne is the maximum expression of Chardonnay; it is produced only in the best years and the grapes from the Grand Cru vineyards of Le Mesnil, Cramant and Chouilly are blended. The 6-year sur lie refinement and the dosage of 6 g / l make it an exceptional champagne, with a marked minerality, accompanied by citrus notes and white flowers. On the palate the fine and creamy bubble and the great flavor make the drink delicious.
From the Champagne areas, precisely from the Montagne de Reims, Ayala decides to give us another unique experience with this Cuveè Brut Majeur Extra Age.
Maison Ayala, which has been part of the Bollinger group since January 2005, is one of the pioneers of dry style: it was one of the first to produce a dry champagne for the Prince of Wales in 1870.
The result of a blend of their grapes, 40% Chardonnay, 40% Pinot Noir and 20% Meunier, this wine reaches our table after an aging of 4 years on the lees.
The Cuveè Brut Majeur Extra Age Ayala presents itself to us with its light and bright yellow color, golden reflections and very subtle bubbles, and then offers us its expressiveness to the nose, with notes of candied citrus, white fruit, bread crust and light touches spicy.
In the mouth it is broad and dense, while retaining tension and chalky minerality, it has notes of white-fleshed fruits and almonds, which leave room for a long and fleshy finish.
The Cuvée Brut Majeur Extra Age has been specially conceived to accompany an inventive and refined cuisine; both at the time of the aperitif and to accompany fish, shellfish, white meats or cheeses.
