The "magic square" on the label is an inscription in Latin, engraved on a stone of Templar origin, found in the municipality of Acquaviva Collecroce, a refreshment point for the Templars who crossed Italy to arrive in the Holy Land, and in many other parts of the world. A mysterious formula, 5 words of 5 letters that can be read in both directions and on each side of the square. This is a probable translation: "The sower (Sator) decides (Tenet) his daily work (Opera) but the supreme tribunal (Arepo) decides (Tenet) his fate (Rotas)".
The harvest takes place in mid-late October. Traditional crushing-destemming and fermentation with maceration on the skins for 12-15 days at a controlled temperature and daily pumping over. The wine is taken from the skins only with a soft pressing, then follows the spontaneous malolactic fermentation. Aged in steel for 18-24 months, followed by refinement in the bottle for at least 3 months.
Tintilia Sator Cianfagna is a ruby red wine. The scent is intense, with hints of wild blackberry and black cherry, plum and undergrowth, accents of spices. Warm taste, the alcoholic note is full and enveloping but well supported by the elegant tannic component.
