Produced by Marco Speri in Fumane di Valpolicella. The grapes used are the native ones: Corvina 60%, Corvinone 25%, Rondinella 10%, Oseleta, Croatina, Pipiona 5%.
The production process begins with a manual and accurate harvest of the bunches, which are subjected to 2 fermentations in full respect of tradition; a first 2-week maceration is followed by a second one of about 10 days, on the exhausted pomace of Amarone. Aging lasts 12 months in 50 hl oak barrels, 6 months in 7 hl barrels and 6 months in the bottle.
Valpolicella Ripasso Secondo Marco is a wine that veers on notes of ripe red fruit and in alcohol, with hints of sweet spices and cinnamon given by the aging in oak barrels; on the palate it is soft and pervaded by a great freshness which balances the slight residual sugar and makes the sip very pleasant.
