Beyond The Clouds Riserva Argentum Bonum Elena Walch is produced with the best of white grapes with a prevalence of Chardonnay from the Crú Castel Ringberg vineyard in the municipality of Termeno.
The date of the harvest of the various grapes from the two "single vineyards", the percentage of which can vary slightly from year to year, is determined by the optimal ripeness of the Chardonnay.
After the fermentation in barrique, a "battonage" is carried out weekly for 3 months. The white wine Beyond The Clouds Riserva "Argentum Bonum" by Elena Walch ages in French barriques for about 10 months, followed by an aging in bottle for five years in a disused mine in Val Ridanna at 2000 meters, in total darkness and complete isolation .
The absolute lack of light, the constant cave temperature of 7°C and a humidity of 95% together with the extremely low air pressure positively influence the maturation process of this wine, giving it youth.

This wine is endowed with amazing freshness and complex aromas, as if it has absorbed this mystical place into the bottle. Although almost 80% is determined by Chardonnay, the other grapes are perceived very clearly. Beyond The Clouds Argentum Bonum always releases different notes from the glass as it warms up. They are enveloping, complex, very attractive scents which together give harmony, elegance and complexity.
