Soffocone di Vincigliata is an explosive and intense red wine, made up of Sangiovese for the most part, with a small balance of Canaiolo and Colorino.
It is vinified with a spontaneous fermentation in steel tanks and then aged for 15 months in barrique.
The Soffocone di Vincigliata Bibi Graetz emerges powerful on the nose with the red fruit of Sangiovese, followed by an almost spicy note typical of Canaiolo and a slight spiciness; on the palate it is soft and persuasive, with a very pleasant, round and well integrated tannin.
A plate of panzanella and a glass of Soffocone, the winning combination!
