This stage, very important, is practiced slowly in an ancestral way with the help of ancient water piston presses, which respect the crushing of the grapes to allow the transhumance of the juices through the skins. The wines produced are distilled with care in an artisanal alembic, refined in a copper mass which is indispensable for obtaining refined brandies. A double distillation of the wines will give rise to the prestigious and incomparable brandy which is the COGNAC. AGEING: Minimum 12 years in oak barrels. COLOUR: Amber gold, with refined nuances BOUQUET: The bouquet is sweet with hints of vanilla TASTE: The taste is round, soft and enchanting, but above all it is refined and persuasive, endowed with a superfine class PAIRINGS: To be drunk slowly, savoring every slightest nuance aromatic
