CabanonInfernot Cabanon is a red wine made from late harvest of Barbera and Bonarda. A wine that, after 3 years of processing and aging in oak barrels, is full-bodied and well structured, with a harmony of aromas of ripe fruit, black cherry, walnut and a soft and velvety taste, with a long and persistent finish. Perfect paired with savory dishes, braised meats and aged cheeses.
Infernot Cabanon, red wine produced in the province of Pavia, fruit of the assembly of 75% Bonarda and 25% Barbera grapes.
The grapes used for the vinification of Infernot are harvested in October, at a very advanced ripeness, with a very high sugar content.
The pressing takes place in the middle of winter and the fermentation of the crushed and de-stemmed grapes, very slow and prolonged, will stop, even in the presence of a considerable sugar content. In Spring, the wine referments in cask, depleting a part of residual sugars, which will remain only in very small quantities, becoming a fundamental characteristic of this wine, which gives it softness and roundness enclosed in a solid body.
About three years pass from harvest to bottling, before being put on the market.
Infernot by Cabanon is a wine with an intense ruby red color that offers an excellent structure, enhanced by a harmony of taste and aroma combined with great softness. The nose releases hints of autumn fruits with notes of plum, berries, black cherry, walnut, tobacco and vanilla. On the palate it opens in all its structure with intense and persistent flavors.
Infernot is excellent to combine with roasted and braised meat dishes, stews, tasty and elaborate dishes and all seasoned cheeses.
