Sauvignon is grown in the Venosta Valley on steep terraced slopes between 550 and 700 meters above sea level facing south, characterized by a sandy and clayey soil with parts of gneiss and shale. The positions of these vineyards allow the grapes to fully ripen without losing their acidity and the aroma that distinguishes it.
he harvest is carried out at the end of September, strictly by hand, after which the grapes are pressed and the must is placed in large acacia wood barrels to ferment, then spends 10 months in aging on the coarse lees, always in the same barrels, and bottled at June, where it continues to mature for another 12 months, before the sale.
The extraordinary result is a bright Sauvignon, straw yellow in color, which immediately reaches the nose with hints of lime, grapefruit, elderberry and yellow apple. The palate confirms its complex aromas and its particular and characteristic pronounced acidity.
